Recently a recall of eggs has been stirred up by the media. The eggs were produced by Wright County Egg, in Galt, Iowa and were distributed to wholesalers and food service companies nationwide.

You can easily identify these eggs:

The recall affects eggs sold under the following brands: Lucerne, Albertson, Mountain Dairy, Ralph's, Boomsma's, Sunshine, Hillandale, Trafficanda, Farm Fresh, Shoreland, Lund, Dutch Farms, and Kemps.

If you bought eggs from any of those brands, you should look for the dates and plant codes that are stamped on the end of the carton or container. The affected plants are P-1026, P-1413, and P-1946. The affected dates range from 136 to 225 (recorded in a scrambled  "Julian format").

For example, eggs in a carton marked with the number P-1413-139 should not be eaten (raw).

If you see them in a store, just don't buy them. If you bought them, make sure that you cook them thoroughly before you eat them. Maybe you think this is gross. But that is what the company will do with the recalled eggs.

"Our primary concern is keeping Salmonella out of the food supply and away from consumers. As a precautionary measure, Wright County Egg also has decided to divert its existing inventory of shell eggs to a breaker, where they will be pasteurized to kill any Salmonella bacteria present," the statement said.

One company, Davidson's Pasteurized Shell Eggs, (www.safeeggs.com) produced by National Pasteurized Eggs, that sells pasteurized eggs already jumped on the wagon by throwing out a press release touting the use of pasteurized eggs. The title of the press release is:

"Pasteurized Shell and Liquid Eggs Recommended by Food and Drug Administration in Wake of Massive Egg Recall."

I personally think it's kind of gross to imagine that I would be eating all the dead salmonella. But that's just me. The best bet is to currently not buy eggs from Lucerne, Albertson, Mountain Dairy, Ralph's, Boomsma's, Sunshine, Hillandale, Trafficanda, Farm Fresh, Shoreland, Lund, Dutch Farms, and Kemps and you are all set.

The USDA offers guidelines for handling eggs safely. They recommend to cook eggs thoroughly. When the yolk and the white are firm, they are done. If you fry the eggs, they should be cooked on both sides. You can also use a covered pan to get the same effect. If you prefer scrambled eggs, make sure that they are cooked long enough, until everything is firm.

Acute symptoms -- Nausea, vomiting, abdominal cramps, diarrhea, fever and headache.
